Preliminary research suggests that the targeted product cleaning approach is the missing step before using PAA to disinfect your product.

Microdroplet cleaning technology could transform poultry processing by eliminating the need for chemical processing aids such as peracetic acid (PAA) and chlorine.
“There are different levels of enforcement and regulations around the world when it comes to disinfection during poultry processing,” said Twan Koenen, Undine® process expert, Innovative Water Concepts. “One of the benefits that we are after is to see how to reduce the costs of PAA usage.”

Cleaning without chemicals
The decontamination approach mixes compressed air and water into microdroplets that are applied to poultry carcasses at a high velocity between every step of poultry processing. The microscopic size of these microdroplets means that it can reach much deeper into microcavities on the bird carcass, such as skin pores or feather follicles.
Recent research from the University of Athens suggests promising test results comparing the microdroplet cleaning method against traditional PAA treatments. U.S. processors report a significant reduction of fecals found at the end of the evisceration line. Using a multi-hurdle approach, processors achieved approximately 1 to 1.5 log reduction in total bacteria count during carcass rinse testing.
