You do everything you can to clean your product as well as possible. After each treatment (the picker, the picker, etc.), you clean your product. However, at the prescribed measurement/control point, the bacterial count is still too high. Very frustrating, and it can cause problems with inspection and with the shelf life of your product. Drag through cooling: possible cause of your problem?
The increased total germ count may have something to do with your drag through cooling. It may cool your product well, but the total germ count on your product can increase significantly because of it. How is that possible? This has to do with the large quantities of products that are transported through the cooling system. Bacteria may not multiply, but they keep adding up. Research showed that already after one hour of production, the quality of the cooling water was worse than the sampling on neck skins at the end of the ready-for-use department.
Cleaning after the drag through cooling is the solution!
With Undine® you can clean your product one last time on the cooling shackles from the in and outside after the drag through cooling. This way, the contaminated water from the drag-through cooling is removed of your product. This ensures that your product meets all requirements and leaves the facility perfectly cleaned.
